Procanico, Drupeggio, Verdello, Malvasia • Umbria • Unfiltered In 2017 the people behind Malauva bought a centuries-old stone farmhouse with 6 hectares of land in Castel Giorgio, at the edge of the Alfina plateau — a vast volcanic plain at 550 metres on the border between Umbria, Lazio, and Tuscany. The Bianco is their most accessible wine: 80% Procanico from an 80-year-old plot, blended with Drupeggio, Verdello, and Malvasia, gently macerated on the skins for colour and texture, then fermented spontaneously with no additions, no fining, no filtration. The volcanic soil does the rest — you can taste it in the finish.
