Rezpiral Series 7: Alejandrina & Nicolás Hernández - Bilia Agave Spirit From Rezpiral’s coveted Series 7 archive comes a remarkably rare, micro-batch expression from the mother-and-son distilling partnership of Maestra Alejandrina and Maestro Nicolás Hernández. Crafting out of their palenque in San Baltazar Chichicapam, Oaxaca, this duo is highly respected for their meticulous technique and deep reverence for hyper-local traditions. This specific release features Bilia (Agave macrocantha), a fascinatingly scarce and distinct agave variety known for its small, compact size, sharp spikes, and highly concentrated sugars. Because of the plant's limited yield, creating a pure Bilia spirit requires an immense amount of labor and patience. Produced in February 2022, this hyper-limited run yielded a mere 250 liters. Alejandrina and Nicolás roasted the mature piñas in an underground stone pit oven, fermented the mash naturally with ambient wild yeasts, and double-distilled the liquid in a traditional copper alembic still. Bottled at a perfectly balanced 44.9% ABV, this unaged spirit offers an incredibly pure look into a rare piece of Oaxacan biodiversity. Tasting Notes Nose: Sharp, bright, and intensely focused. It opens with an electric burst of green citrus peel, kaffir lime, and fresh lemongrass. As it sits in the glass, a deep, rustic foundation emerges, showing notes of wet gravel, white pepper, and a very clean, integrated pine-wood smoke. Palate: Crisp and beautifully balanced. At 44.9% ABV, the spirit glides onto the tongue with a silky texture that delivers immediate flavors of sweet roasted agave, crisp green apple, and fresh culinary herbs like mint and tarragon. Mid-palate, it leans into a dry, chalky minerality with a subtle touch of salinity. Finish: Medium-long, exceptionally clean, and refreshing. The fruit and herbal notes fade gracefully, leaving behind a persistent, elegant echo of river stones, bright ash, and a final, pleasant wave of sweet agave nectar.
