With fine white flesh and a subtle flavour, it offers much of the elegance of more famous flat fish while remaining wonderfully versatile in the kitchen. This is a fish that rewards restraint. Pan-fry gently in butter, bake with lemon and herbs, or serve with simple seasonal vegetables. The flesh cooks quickly and flakes delicately, making it an excellent choice for lighter meals and uncomplicated cooking.
