55% Sauvignon Blanc, 45% SémillonThe maiden 2025 Ormes de Pez Blanc comes from vines planted three years ago, on four hectares of cooler soils, representing just 3,000 bottles this year (it will increase to around 20,000 in the future). Matured in used oak, tank and amphora, this has an attractive bouquet with white peach, Anjou pear and light white flower scents. The palate is well balanced, with a fine bead of acidity, more texture than the Blanc de Lynch Bages and a dab of stem ginger on the finish. 91 Neal Martin, Vinous (2026)The 2025 Ormes de Pez Blanc is a new wine in the range. Ripe pear, lemon confit, white pepper, slate, mint and white pepper lend notable brilliance throughout. Drink this airy, aperitif-styled white over the next few years.
