How the Better Vessel Works Crema contains emulsified oils and microbubbles that can contribute bitterness and harshness to espresso. The Better Vessel allows baristas to: Pull espresso directly into the vessel. Allow the crema to naturally rise to the top. Release the espresso from the bottom using the precision ball-lock valve. Because the valve releases espresso from beneath the crema layer, the crema remains in the vessel while the clarified espresso flows out.
