While focused on organic production, coffee is their core business, but their work extends far beyond that. They provide technical assistance to farmers and establish community projects, supporting primary education and addressing issues such as gender equality and food shortages. This natural-processed coffee originates from the Mayan indigenous region of Quiche (also known as "Quiche"), one of Guatemala's most densely populated provinces. Most of the coffee-growing areas are located along the Chuacousse Mountains, stretching from Quiche to Lower Verapaz, with plantations at altitudes between 1600 and 1700 meters. Several years ago, the cooperative built a washed processing plant in the town of Hojabach to centrally collect coffee cherries from surrounding villages for better quality control. This is a natural-processed coffee, meaning the entire coffee cherry, including the green seed inside, is dried. Compared to the washed process, drying whole coffee cherries takes longer, which gives the coffee a rich fruity aroma, a full-bodied taste, and lower acidity, which is exactly what we found in this coffee.
