For this limited release, an exciting first for VineCo the juice was pre-oaked in-house, steeped for six months with local Niagara whisky oak chips*. Steeping the juice with whisky oak chips adds depth and structure, enhancing tannins while rounding the palate and layering in notes of sweet spice and brown sugar. The result is a confident, full-bodied wine where Cabernet’s dark blackcurrant and plum meet Syrah’s ripe wildberry and savoury spice. The blend finishes with hints of mocha, vanilla, and a gentle wisp of smoky toasted oak- an unmistakable mark that lingers long after the last sip. FOOD PAIRING Pairs beautifully with grilled ribeye, braised short ribs, or lamb chops, where the wine’s structure complements rich, savoury flavours. Its depth also enhances dishes like mushroom risotto or aged cheeses such as cheddar and gouda. For a finishing touch, try alongside dark chocolate or cocoa-based dishes to highlight its layered complexity. *Whisky oak is not included.
