Lumache Rigate
This pasta is made from durum wheat grown by the company. It uses only semolina and water. The Lumache Rigate are bronze die extruded and air-dried between 36°C and 55°C for 22 hours. They have a 15 mm diameter and are 25 mm long, cooking in 8-10 minutes.
