El Diviso, Colombia (Experimental Decaf)
Located in Pitalito, in the south of Huila, El Diviso has become known for its forward-thinking approach to Colombian speciality coffee. Led by Néstor Lasso, the farm focuses on experimental processing, rare varieties and innovative methods to continually raise the bar for quality. This lot is the Ombligón varietal, a popular competition choice and valued for its vibrant sweetness and delicate complexity. This coffee has undergone a carefully controlled experimental process, beginning with controlled oxidation, followed by anaerobic fermentation, and finished with a thermal shock to halt fermentation at just the right point, all designed to highlight its naturally sweet and fruity character. Once the final process of Sugarcane decaffeination is complete, the end result is this absolutely stunning rollercoaster of fruit and floral flavours. A sensory kaleidoscope of the very best.
