Three hundred smallholder farmers in the Bensa hills of Ethiopia's Sidama region deliver their ripe cherry to the Mirado station, where the washed process does exactly what it's meant to do: get out of the way and let the coffee speak. Variety 74158 — an heirloom selection with roots in western Ethiopia's wild forests — grows slowly at altitude and arrives in the cup with a clarity and brightness that is distinctly Sidama.
