Wild halibut from Norway, the largest of the flatfish, prized for its firm, white flesh and mild, clean flavour. It is available all year, with its best season starting in November.At the auction we go through the boxes landed by Norwegian fishing boats in the early morning and pick the finest fillets by hand.Weight Sold by weight – CHF 118 per kg Choose how much halibut you want in steps of 100 g, from 300 g to 2 kg; need more, simply increase the quantity About 150–200 g per person for a main course We always aim for the exact weight you order. Every piece is cut by hand, so it can differ slightly, and when it does, you usually get a little more rather than less.How to cook itHalibut is best kept simple. In the oven: season the fillets with lemon, salt and pepper, drizzle with olive oil and bake at 180 °C for about 12–15 minutes, depending on thickness, until the flesh just turns white and flakes. In the pan: fry in plenty of butter over medium heat, a few minutes on each side. Serve with roasted vegetables or boiled potatoes and a cold sauce – our roe sauce or crème fraîche with dill and lemon.We cut and pack your fish fresh on Thursday morning.
