Guatemala - Joyabaj Honey
We've got a new short run honey process coffee from Guatemala in the line up. It comes from a number of smallhold farmers from the Chuaquenun community, in Quiché, Guatemala. For the honey processing, the coffee gets pulped after harvest which removes the coffee cherry skin and some of the fruit. The remaining fruit is left to dry on the bean, leading to increased sweetness and complexity. After a period of drying, the beans are then washed and dried again before getting bagged for transport. We find notes of cherry, malt, cinnamon, honey, baking spices. Processing: Honey Processed Grown at 1300 - 2000m above sea level. Light roast. 340g 2 lb or 5 lb whole bean coffee. **Grinding available for 340g bags only.**
