Daly's Cottage 2022 Merlot: Sam Kim, Wine Orbit, 90 Points - “Delightfully ripe, the wine shows dark berry, green olive, brown spice and toasted nut aromas on the nose, followed by a silky palate displaying bright fruit flavours with finely pitched tannins.” Daly's Cottage 2021 Cabernet: Sam Kim, Wine Orbit, 93 Points - “Intensely aromatic, the wine shows Granny Smith apple, apricot, rock melon and lemon zest notes on the nose. The palate is equally appealing with juicy fruit intensity combined with fine texture and lively acidity, leading to an exuberant finish.” August 2024. COLOUR: Deep red with good intensity and firm legs. NOSE: Blackcurrant, cinnamon toast with hints of stewed plums hints of mint and cloves. PALATE: Full bodied ripe forest berries with blackcurrant brioche supported by a tightly woven frame of velvet tannins finishing with delightful cherry vapour wrapped around a clean dusty finish. WINEMAKING: Cabernet is selected and blended from local vineyards and our own Estate fruit. Small static, as well as traditional open top fermenters, were used to ferment on skins over a period of eight to ten days, with regular pump-overs and head plunging for maximum extraction of fruit flavours, colour and the delicate fruit tannins. French oak is used to provide added complexity and fine tannins. FOOD PAIRING: Beef Cannelloni, juicy steak, mushroom risotto, burgers, lamb, cheese platter, smoked tofu. VINTAGE NOTES: A wet winter recharged the soil and good spring weather encouraged healthy growth across all varieties. A mild start to the season progressed to be a cooler than normal growing season with well-placed summer rains (before veraison). The cool autumn made for ideal harvest conditions.
