David Armijos Gesha
Note: This coffee is a very light roast, and as such, opens up significantly over the first few weeks of degassing. Bags may be sent out around a week off roast instead of within a few days. When we were on the sample table with this coffee, the first question from the roastery team was "Do we have any occasion to run a special soon?". This lot is just that tasty and we are super happy to have it in our warehouse. David Guevara Armijos, a second-generation farmer, owns 3 hectares of land in La Libertad, La Coipa. His farm's soil, relatively high elevation and high humidity make it perfect for producing high-quality coffee. He grows Castillo, Caturra, Catuai and Gesha, with much of the harvesting being done by him and his family. This lot is made up of exclusively Gesha, a variety known for its complicated florals, citruses and fruits. As well as the varietal, the coffee undergoes 12-24 hours of extra fermentation before washing. After washing, it is dried on raised beds for 10 days. In the cup this one is super unique. The main note is a strong red cherry, which is backed up by a bouquet of tropical fruits and a sweetness that reminds us of sweet tea. It's fruity, complex and super pleasant.
