After stepping away from law studies, he took over the family farm and began transforming it into a hub for experimental and high quality coffee production. Today, El Placer is known for its innovation, combining hospitality, education and cutting edge processing to create a full “seed to cup” experience for visitors and buyers alike. About the Lot This coffee undergoes an extended 168 hour anaerobic fermentation with CO₂ injection, combined with lactic inoculation and selected microorganisms to carefully guide flavour development. It is then dried slowly under controlled conditions before stabilisation, ensuring both intensity and clarity in the final cup. The result is a striking profile with citrus brightness, spice and cooling sweetness, creating a cup that is complex, expressive and unmistakably Sebastian.
