Grape Variety: Chardonnay Producer: Domaine Labet (Charline, Julien and Romain Labet) Region: Rotalier, Sud-Revermont, Jura, France Wild Scale: 3/5 Vegan friendly wine Winemaking: Organic Chardonnay grapes were hand harvested. Fermentation with indigenous yeast. 24 months in barrel and 24 months in tank. Bottled in August 2022. No fining or filtration. Very small amount of sulphur on bottling. 5mg sugar per litre. This Wine: We haven't had the pleasure of drinking this (yet) but it's Chardonnay made in the ouille style (topped up, not oxidative). Powerful, rich and round but with the acidity to match. Notes on the Winemaker: Domaine Labet is one of the most sought after names in the Jura. This is in part down to the unique soils in Le Sud - Revermont, the region in which most of the parcels of vines are located. The family is renowned for its focus on producing ouielle wines (topped up, not-oxidative) from single plots of Chardonnay that reflect their terroir with amazing precision.
