Finca La Ilusión Chiroso
Luis Carlos Urrego is a second generation coffee grower in Urrao, a municipality in Antioquia, Colombia often considered to be the birthplace of the Chiroso varietal. Urrego grew up on his family’s farm and learned the art of coffee production from his father. 20 years ago he decided to move closer to town and sold the family farm in the process, but his love for growing coffee remained strong. 7 years ago, Urrego purchased a 2-hectare plot of land, which he named La Ilusión, and began cultivating Chiroso and Caturra varietals. In addition to his passion for cultivating coffee, Urrego is a lover of old cars, and runs a car workshop in town. We’re very excited for our first time featuring coffee from La Ilusión. For this lot, ripe cherries were picked and immediately depulped, then submerged in water to ferment for 16 hours. After, remaining mucilage was removed from the seeds, and they were laid out to dry on raised beds for 13 days. This coffee has a creamy caramel-like body, silky mouthfeel, and a bright honeycrisp-like malic acidity. We get a milk chocolate sweetness that reminds us of the tasty Colombian treat Chocoramo.
