This Chablis is drawn from a small parcel in the Vaillons climat planted to Chardonnay vines over 70 years old—low yields and deep roots that deliver rare concentration. Unlike Dauvissat's steel-raised Chablis, this Premier Cru is partially barrel-fermented with around 25% new oak, giving the wine a creamy, layered texture while preserving the cut and tension that define great Chablis.
