A tasty daiquiri riff that swaps rum for gin, layered with coconut syrup and Aperol. Sophisticated enough to stand on its own while still feeling like a proper beach drink. Adapted from Hayley Wilson. Ingredients: 1 oz Toasted Coconut Syrup 1 ½ oz gin ¾ oz Aperol ¾ oz fresh lime juice 3 dashes Angostura bitters Instructions: Add all ingredients, minus bitters, to a shaker Add ice and shake for 10-15 seconds Double strain into a glass Top with bitters Glass: Collins Garnish: lime wheel umbrella
