Fresh Scallop & Salmon Kebab Skewers

Two of the best things on the fishmonger's slab, on one skewer. Each pack contains four skewers, with two hand-cut scallops and two pieces of salmon on each. The sweetness of the scallop and the richness of the salmon work together well, and both suit the same high heat and quick cooking time. Grill over a high flame or cook on the barbecue for the best result. A couple of minutes each side is all they need. The scallops will caramelise and the salmon will take on a little colour while staying moist inside. Brush with a little olive oil and season well before cooking, and finish with a squeeze of lemon. Our scallops are sourced through Brixham Fish Market, landed fresh from the South West coast. The salmon comes from high-welfare farms in Scotland and the Faroe Islands. Both are hand-cut to order, with nothing sitting in stock, and sent out fresh on your chosen delivery day. Always fresh and never previously frozen, so you can freeze them at home if needed. Serve simply with a herb butter or a squeeze of lemon alongside.
