Sushi Beyond the Roll
Step into the kitchen and try your hand as the sushi chef! Tracy Matsue Loeffelholz will guide us through a bright, hands-on sushi class that goes well beyond the usual roll. We’ll start with playful poke temaki (spicy ahi twirled into crisp nori cones), then create colorful temari balls layered with fish and a variety of pickled vegetables. Along the way, we’ll learn how to select and prepare fresh salmon, make proper sushi rice with homemade seasoned rice vinegar, and bring it all together in a showstopping salmon oshizushi cake (pressed layers of rice, salmon, avocado, and wasabi mayo) topped with cucumber rosettes and tobiko (flying fish roe). We’ll sit down to enjoy our sushi feast with freshly pickled ginger and classic miso soup. At each Class on the Farm you will get the chance to enjoy Bellsong Creamery cheeses, sip a glass of something special, and gather around a beautifully prepared meal.
