Having spent the last 24 months on incredibly lush pastures they've developed AMAZING yellow fat and breath-taking marbling...... simply stunning. These older cattle are retired for at least 24 months before making their way here, developing some superb intramuscular fat (marbling) and maturing on the hoof.....they really do look absolutely awesome! Aged for 70 days in house!.....this beef looks impeccable! Expect a deep, rich flavour from the dairy breed and a wonderful texture from our in-house ageing.
