Red Burgundy Okra is a stunning 1988 All-America Selections winner that is as beautiful in the landscape as it is productive. The plants reach a height of four to five feet and feature striking deep red stems and leaf ribs that contrast with large green leaves. Throughout the heat of the summer, the plants produce beautiful, hibiscus-like yellow flowers with dark centers. These blooms quickly develop into slender, deep crimson pods that maintain their vibrant color even during cooking. For the best culinary quality, the pods should be harvested when they are between three and six inches long. They offer a mild, slightly sweet taste and a crisp texture that is excellent for frying, pickling, or thickening stews. This variety is noted for its high yields and its ability to thrive in hot and humid conditions where other plants might struggle.
