Here locally sourced sloes are added to Paula McIntyre original gin and, as a nod to Paula’s Scottish ancestry, combined with Dundee honeyberries to add depth of colour and flavour. Raw honey from the Ards Peninsula in County Down, where the bees feast on borage and clover flowers, balances the lip puckering astringency of the berries.
