Selectively picked cherries are pulped and then fermented for 48-60 hours before undergoing a traditional washing process, after which the parchment is laid out to sun-dry for 15-20 days. Description: On the front end you pick up on notes of raspberry tart and marigold. The body is light medium and juicy, accompanied by a creamy mouthfeel and notes of sweet apple. The finish is smooth and balanced, with lingering notes of butterscotch and marigold.
