What's inside — and why the form matters Butterfly Pea Flower — whole Clitoria ternatea, known across India as aparajita. Whole dried flowers, and the reason the cup turns a deep blue within seconds of the water going in. That colour comes from anthocyanins — the same family of plant pigments found in blueberries and black rice — and it is real, not a dye. Squeeze a little lemon in and watch it turn violet. The anthocyanins shift colour with acidity, which is a genuinely useful thing to know and a good trick to show someone. We keep the flowers whole because broken petals lose colour to the packet before they ever reach your cup, and because a whole flower opening in the water is half of what you're paying for. Fenugreek — lightly crushed Trigonella foenum-graecum. Methi seed, cracked just enough to open the seed coat and no further. A fine cut keeps the surface area high enough to infuse quickly across three minutes while holding onto far more of the aroma. Powdered ginger would also cloud the cup and hide the blue, which rather defeats the point. Dandelion Leaf — cut Taraxacum officinale. The leaf, not the root — a distinction worth making, because they are different ingredients with different characters. Dandelion leaf is a traditional bitter green, eaten and infused across many food cultures, and it brings a clean, slightly bitter backbone that keeps this blend from tasting like a soft drink. Cut rather than powdered so it steeps clear. Lemongrass — fine cut Cymbopogon. Stalk, cut fine. Its citral is what gives the blend its lift — the bright, almost lemony top note you get in the first sip. Lemongrass cut too coarse won't release inside three minutes; ground to powder it turns dusty and clouds the water. Fine cut is the form that gets the aroma out and leaves the cup clean. Spearmint — cut leaf · Cut so the leaf keeps its structure and its cooling finish. Why an infusion, not a capsule Whole, cut, crushed — each chosen separately. Grinding everything uniform would be cheaper. It would also cloud the water and kill the colour, over-extract the fenugreek into bitterness, and blow off the ginger's aroma. Flowers stay whole.
