Processing here is deliberate at every stage. After manual harvest and rigorous selection, cherries undergo a carefully controlled two-stage fermentation using selected microorganisms, a method Wilton has refined to coax out the variety's natural fruit character without distorting it. A signature thermal shock wash follows, alternating hot and cold water to stabilize the coffee's structure and lock in the aromatics developed during fermentation. Drying proceeds at a constant 38°C, a steady, low temperature chosen to preserve the volatile top notes through to the final cup. In the cup, orange zest leads with a bright, natural citrus clarity. Ripe peach adds softness and dimension, while vanilla sweetness settles underneath, providing warmth and roundness.
