Fresh fingerroot (กระชาย), known as krachai, is a slender aromatic rhizome with a warm, peppery flavour and earthy, lightly citrusy notes. It has a distinctive fragrance commonly associated with spicy Thai fish dishes and herb-filled curries. How to use: Rinse thoroughly and lightly scrape away any rough skin before finely slicing, shredding or pounding. Add fingerroot to pad cha, jungle curry and spicy seafood stir-fries, or blend it into curry pastes for khanom jeen nam ya.
