Sonata Strawberry Preserve

This is strawberry jam the way it tasted before sugar took over. Single Variety Co. uses British Sonata strawberries, a variety grown specifically for sweetness, and packs in far more fruit than most jam recipes call for, with less sugar to match.A short cooking time keeps the colour vivid and the flavour close to fresh fruit rather than cooked-down sweetness. It won Taste of the West Gold in 2023. The colour alone gives away how little sugar's doing the work here.
