Takamine Koji Fermented Whiskey is made with the patented Takamine Process, which uses an ancient Japanese mold, koji, to convert starches to sugars in a process similar to malting barley. This 100% barley ferment is then pot-distilled twice and aged in 2nd-fill American White Oak casks. After six years in white oak, the whiskey spends a final 12-17 months in sakura casks. The flavor profile is uniquely delicate yet vibrant with notes of cherry blossom, light vanilla, and a hint of spice, accompanied by green apple and fresh herbs.
