Symbolizing a hopeful future where sustainable reforestation pairs with extraordinary quality, this Natural Guamo coffee relies on a highly sophisticated, extended controlled fermentation process designed to amplify its natural sweetness and complexity. The meticulous journey begins with perfectly ripe cherries undergoing a 36-hour anaerobic pre-fermentation in GrainPro bags to develop vibrant tropical notes, followed by a 96-hour fermentation in shaded hermetic tanks at a stable 23°C. The coffee is then mechanically dried over seven days at precise humidity intervals and rested for 30 days to stabilize its characteristics, ultimately delivering a complex, balanced cup defined by rich cocoa undertones, vibrant citric acidity, and distinct notes of cherry, blueberry, green apple, and tropical fruits.
