Our Dry Farmed Tomato Galette feature the renowned Dry Farmed Early Girl Tomatoes grown by Dirty Girl Produce. These intensely flavorful dry-farmed tomatoes are cradled inside our flakey buttery ruff puff pastry and filled with whole milk ricotta and gruyere cheese, basil oil, and sliced garlic. In dry-farming, once the plants are established, irrigation is cut off, forcing the roots to grow deeper into the soil to seek water and nutrients. Though this stresses the plant, it results in an intensely sweet and flavorful tomato that uses minimal water. The incredibly sweet and umami-packed flavor of the tomatoes shines in these rich, bright, and comforting tartlets.
