Raviolone Mold

Some days call for a dozen delicate ravioli. Other days call for one glorious raviolone. This hand-carved beechwood mold is built for the latter: a single, oversized cavity with a decorative border and a deep well at the center, made for generous fillings that need room to breathe. Made in Trentino, the mold presses a refined, ornate edge into the pasta as you work, so even one giant ravioli looks like it came from a pasticceria window. Roll a thin sheet of fresh sfoglia over the mold, spoon in your filling, top with a second sheet, and press firmly with a rolling pin to seal and imprint the pattern. Trim the edges with a pasta wheel, and you're left with a single showstopper ravioli — ideal as a playful appetizer, a dinner-party centerpiece, or a gift for the pasta lover who has everything else.
