This coffee is produced in an Indigenous Reserve, Munchique Los Tigres in Santander de Quilichao, home to the Nasa people, whose cosmovision shapes life and production. This worldview sees territory as a living being, where rivers, mountains, and forests are sacred guardians. Coffee farming reflects this philosophy. The association Nasa Pkakjera Uss Ya Txnxisa (NAPUY), joined CENCOIC in 2012, and has grown from 39 families to 232 producers and now operates its own warehouse, giving the community greater control over the supply chain. Coffee is cultivated as an act of reciprocity with nature. Rituals often accompany planting and harvesting, asking permission from the earth. Shade-grown systems and biodiversity preservation are maintained because they sustain life and spiritual harmony.After picking, beans are ‘floated’ – the process of removing unripes, twigs and leaves – before being pulped. Fermented for an average of 14 to 20 hours, the beans are then washed clean. After this process, parabolic driers or patios are used for sun drying, typically for between 8 to 15 days.
