Grown Slow, By the Hands That Pick It In the hills around Timaná — the town southern Huila still calls its mother, "La Madre del Sur del Huila" — coffee is very much a family affair. Small growers work plots of just two or three hectares, picking each cherry by hand and staying with it through fermentation and drying instead of passing it down the line. This Caturra comes from young trees, just four years in the ground, farmed with a patience you can taste: a slow 100-hour anaerobic fermentation, then 25 unhurried days spread out to dry under the open sky. What comes out the other end is soft, sweet, and full-bodied — a cup that feels as unhurried as the hands that made it. What it tastes like: Ripe red fruit and melted panela up front, cacao settling underneath, and a bright flicker of citrus that keeps it from ever turning heavy.
