About the artwork This chromolithographic plate documents twelve cuts of bacon and ham including Forelock, Collar, Streaky, Prime Back, Small Back, Flank, Long Back, Gammon, Corner, York Ham, Side of Bacon, and Mild Cured Ham, each numbered and identified in the caption below. A diagram of the full side of bacon with numbered sections is included at right. It was produced for Mrs. Beeton's Book of Household Management, one of the most widely distributed domestic reference works in the English-speaking world, first published in 1861 and revised through numerous editions. About the artist Mrs. Beeton's Book of Household Management was compiled by Isabella Beeton and published by S.O. Beeton in London. The illustrated plates across its various editions were produced by commercial artists and engravers working within the Victorian publishing tradition.
