The entire project is family-owned and operated and 100% of the yield is processed on-site - there is a dry mill and drying areas on the plantation. We have been buying their coffee for a few years in a row now. This year we have the natural San Isidro from the Los Santor region at an elevation of 1850 masl. The catuai variety is hand-picked when very ripe and is dried on African beds with direct sunlight. How it's roasted For complex coffees like this, the goal is always clear: maximize flavor while optimizing for versatility. Our precise roasting approach pinpoints the narrow sweet spot where the inherent complexity is maintained, and the coffee performs beautifully across both espresso and filter methods.
