The base is wild lingonberry concentrate — tannin-rich, sour, and deeply fruity — combined with rosemary and birch leaves for bitterness and grip, and lemongrass from Bergsmyrene farm for a citrus lift. Each herb is infused separately to extract exactly what's needed, then brought together for a short fermentation to build structure and balance. The result has the kind of mouth-drying, food-friendly character you'd expect from a light red — without trying to be one. A small amount of unrefined cane sugar is added as a base for fermentation — most of it is consumed by the lactic acid bacteria during the process. What remains (4.6g/l) is residual, not added sweetness. Complex enough to open at the table, easy enough to reach for any time.
