Mexico Viva Chiapas! Organic

Cupping Notes: Chocolate, Orange, Brown Sugar Chiapas is the foremost coffee production region of Mexico. This Organic, High Altitude, Hand Picked Coffee is very delicious full bodies coffee with distinct chocolate and oragne notes with a natural sweetness. We love this coffee and roast it to when we hear the second crack fully developed. These photos are from our time on a coffee farm working with the families who were working the harvest. Its a family affair, with children taking time off school to help with the family economy. We too pitched in, picking only the red ripe cherries. After the de-pulping and patio sun drying, we help sort out the imperfect beans, which the workers brewed as we worked.
