100% Cabernet Sauvignon Region: Veneto, Italy ESTATE HISTORY The name DS stands for the initials of the surname De Stefani, the family that has been producing Premium wines in Veneto, Italy, for five generations. "Tra Mari e Monti" represents the true meaning of these wines, which are part of the DS Diesse Signature Collection. TERROIR These wines are carefully crafted in Veneto, in the north-east of Italy, between the Adriatic Sea and the Dolomite Mountains. This location provides a perfect microclimate that is mild with very few rain showers and high summer temperatures, allowing the grapes to ripen perfectly. The soil in this production area is alluvial and very rich in clay. VITICULTURE The vineyard consists of 100% Cabernet Sauvignon grapes with a density of 4,000 to 8,400 vines per hectare, trained using the guyot system. To obtain a perfect ripening, the estate performs summer pruning and careful leaf thinning in addition to standard management. The yield is kept very low to produce grapes rich in body and aroma. Harvest typically takes place at the end of September or the beginning of October, focusing on very ripe grapes with deep color, complete aromatic structure, and smooth tannins. WINEMAKING The vinification process begins with destemming and crushing, followed by maceration for 10 to 15 days in special vessels at 25-28°C with frequent pumping over. The wine then completes fermentation exclusively with wild yeasts at a controlled temperature in stainless steel vats. After malo-lactic fermentation, the wine matures for several months on its noble lees in barrique. The final product has an alcohol content of 13.5% by volume and is bottled in 750 ml containers designed for horizontal storage. The structure allows it to improve in the bottle for up to 15 years, reaching its peak 8 to 10 years after harvest. TASTING & FOOD PAIRINGS The wine presents a ruby red colour with purple hues. On the nose, it offers complex aromas of wild berries, musk, graphite, and tobacco with balsamic hints. The taste is characterized as vigorous yet soft, featuring strong tannins and a refined style. It is best served at a temperature of 16-18°C. For food matching, it is ideal with braised and stewed meat, game, mushrooms, and aged cheeses.
