Hirame Sashimi

Hirame, or Japanese flounder, is a flatfish commonly found in the Pacific and Atlantic Oceans. Unlike many other types of sashimi, hirame has hagotai — a pleasant bite. Its texture is slightly crisp and firm, which enhances the fish’s natural sweetness with every mouthful. Hirame sashimi is not only ideal for sushi and sashimi, but also works beautifully in fresh salads or dishes like ceviche.
