About the farmer: Hacienda Copey was found in 2011 with the aim of producing hig-quality specialty coffee in the Tarrazu district of Costa Rica. They've won the Cup of Excellence twice in the past and consistently aim to produce complex coffees. Roaster's notes: This is our second year working with Hacienda Copey. Clean, layered profile that starts with mango, then goes slightly sour (fuji apple) and finishes with a tart cherry/caramel sweetness. There's also a bit of a sparkling characteristic in this cup. If you get this with the #185, you should be able to lock the commonality between the two to taste the terroir expression of Hacienda Copey. Brewing Notes: V60 Water temp: 90-93C Brew recipe: 0. 18g grounds a tad coarser 1. 60mL bloom (for 40 seconds) 2. 60mL second bloom (until water drains) 3. pour to 300mL -- apply light swirls if grounds are sticking to brewer sides Push. This is a clean washed coffee. I'd leave it alone for 4+ weeks if possible. Rest notes: I'd rest it 4 weeks+. We aim to roast this one light (~9-10% weight loss).
