A refined Venetian red, born in the clayey soils of the province of Treviso, where the microclimate favors balanced ripening capable of enhancing aromas, freshness, and aromatic finesse. In the glass, it stands out for its brilliant ruby red color and an elegant bouquet of small red fruits, rose petals, light spices, and citrus nuances. The palate is harmonious, savory, and persistent, with a pleasant freshness that accompanies the entire tasting experience. The 1.5-liter Magnum version, presented in an elegant wooden case, further enhances the evolutionary qualities of Pinot Noir and is ideal for important occasions, convivial dinners, corporate gifts, or for enthusiasts of great Venetian red wines. Serve at a temperature of 16/18° C, in square glasses; it is recommended to remove it from its storage location one day in advance to gradually bring it to temperature. Soil Characteristics: Medium-textured, clayey alluvial soil, Guyot training system, 4,000/5,000 plants per hectare, yield 115 q/ha. Organoleptic Notes: Fascinating ruby red color, fine and elegant aroma, with hints of small red fruits and rose petals, slightly citrusy, spicy, and delicately herbaceous. The perfect correspondence with the olfactory characteristics, among which spices stand out, is accompanied by a present savoriness, sought-after freshness, and a good body, persistent and harmonious in the finish. Serving Temperature: Serve at a temperature of 18/20° C, in square glasses. Alcohol Content: 12.50% Aging: Aging takes place for 6 months in concrete tanks and for an additional 3 months in the bottle. Vinification Notes: After destemming and crushing, a cold pre-fermentative maceration is carried out for 4 days, after which classic maceration will take place for 6/8 days. The alcoholic fermentation of the must occurs at a controlled temperature of 20°C, then malolactic fermentation is encouraged to begin. Yield per Hectare: Yield 115 q/ha. Harvest Period: First ten days of September, manual harvest. Pairings: Roasted white meats and small game, soft cheeses, including blue cheeses. Traditional pairings: "sopa coada" or gnocchi with ragù.
