Finca El Diviso has been Blanca's home and agricultural playground for many years. Only ripe cherries were collected and sorted by density. After depulping the outer skin, leaving the inner mucilage intact, the beans then fermented anaerobically for 48 hours. Then they dried for 18-24 days on airflow canopy beds.
