Andreas Tscheppe Salamander
An amazing Chardonnay that craves the carafe. First the reduction which gives a smoky intensity which slowly melts to into aromas and flavours of waxy citrus, pollen and toasted oatmeal. This is a wine of texture and shifting aromas. Drink in a Burgundy glass. Working from a corner of his brother Ewald's cellar, he tends small parcels across several sites, crafting only white wines from Sauvignon, Chardonnay and two Muskatellers - some pressed, some skin-contact, all aged for extended periods in barrel. Farming is biodynamic, with the vitality of soil and ecosystem at the heart of everything; his vineyards are alive with flowers and insects, harvested entirely by hand with selection beginning among the vines to keep yields naturally low.
