Schmaltz

Schmaltz is rendered chicken fat — the cooking fat that Ashkenazi Jewish grandmothers have been reaching for since before anyone thought to write it down. Roasted potatoes, chopped liver, matzo balls, eggs — anything that benefits from a deep, savory, distinctly chicken-forward richness that no other fat quite replicates. Ours is rendered from our own pasture raised chicken during our broth making process. Seven 8 oz containers are available this year. When they are gone, they are gone.
