1. About "EXPERIMENTAL FOR CORES" Grounded in our philosophy, "The Quest for the Original," we developed our first single malt Japanese whisky, "SHINDO EXPERIMENTAL 01," in 2025 — an expression of our commitment to creating the very best we can as challengers. Building upon that foundation, we further deepened our focus and dedication to craftsmanship, giving rise to "SHINDO EXPERIMENTAL for CORES." As its name suggests, this series is dedicated to true whisky enthusiasts, offering a glimpse into our pursuit of originality and the evolution of our craft. 2. About "EXPERIMENTAL FOR CORES.01" Primarily matured in chestnut casks A vatting designed to embrace both the strengths and the challenges of chestnut wood With these two guiding principles, we developed CORES.01. At Shindo Distillery, while we are deeply committed to crafting distinctive new make spirit, we also draw upon our long-standing expertise in barrel aging from shochu production, exploring possibilities with more than ten types of casks. Among them, chestnut casks stood out as the most intriguing and challenging. Their dense, maple-like sweetness, subtle spiciness, and bittersweet nutty notes inspired us to release this expression as CORES.01. Chestnut casks are notoriously difficult to work with. While they impart a rich, sweet aroma reminiscent of roasted chestnuts, their sweetness appears more prominently in the mid-palate, accompanied by natural tannic bitterness. In CORES.01, we blended bourbon cask–matured spirit to complement the chestnut's sweetness on the top notes while softening the bitterness to a pleasant level. The final composition is 55% chestnut cask, 43% bourbon cask, and 2% Cognac cask. A small addition of Cognac cask–matured whisky helps to extend the finish and round out the overall profile. The result is a whisky that perfectly expresses the Shindo character — milky, fatty, and toffee-like notes derived from lactones in our new make, harmoniously woven together with the chestnut cask's gentle sweetness and refined bitterness.
