Nikolas Juretic spent years pruning vines across Europe with Simonit & Sirch before coming home to shake up a sleepy corner of Collio. Mont is his coolest site — a single north-east plot on the Quarin hill above Cormons, mostly Friulano planted in 1968, where constant wind and cold nights keep everything taut. He foot-stomps the whole bunches and gives them just two days on skins: barely orange, all nerve. Eleven months in concrete, no filtering, a whisper of sulphur.
