Ovum, PNK Salt Rose 2024
Oregon winemaking couple John and Ksenija make each wine the same way - including use of concrete eggs, as per by the name Ovum, informed by their belief in the link between the natural shape of the egg and the lifecycle of the wine (and actual practical lees movement benefits). If the wine smells and tastes different, it has everything to do with terroir, and very little with the winemaker, which is basically their mantra. They focus on white wines, which they believe to be more terroir transmitting, but this rosé has that same mineral backbone suggested by the name Salt (like their Big Salt white). From certified organic Cabernet Sauvignon (with a dash of their Big Salt blend) it has a red wine nose, but with bright cherry and fresh sappy green fig and herbal notes, and bracing acidity for that total Trinkfluss.
