Whole dried hibiscus flowers, the same flor de Jamaica used for agua fresca across Mexico. Tart, deep red, and naturally caffeine free. One pound is about 9 to 10 cups of dried flowers, which makes somewhere around 6 to 8 full pitchers of agua de Jamaica. That’s a lot of batches for one bag, and it stores for months. How to make agua de Jamaica (makes about 12 cups): Rinse 1 1/2 cups of dried flowers in cold water and drain them. In a pot, bring 4 cups of water to a boil with the flowers. Lower the heat and simmer 10 to 15 minutes, until the flowers soften and the water turns deep red. Take it off the heat and let it sit 10 minutes. Strain into a pitcher, pressing the flowers with the back of a spoon to get all the liquid out. Discard the flowers. Stir in 1/2 to 3/4 cup sugar while the liquid is still warm, until it dissolves. Add 8 cups of cold water and stir. Taste it. More sugar if it’s too tart, more water if it’s too strong. Chill and serve over ice. Variations worth trying: Add a cinnamon stick or a cone of piloncillo while it simmers Finish with fresh lime juice Add fresh ginger or a few slices of orange to the pot Skip the dilution to get a concentrate for paletas, raspados, or cocktails Other uses: Hot hibiscus tea, straight from the concentrate Tacos de Jamaica, where the strained flowers get sauteed instead of thrown out Syrups, jellies, and marinades Product details: Whole dried hibiscus flowers (flor de Jamaica) Net weight: 1 lb, about 9 to 10 cups Makes roughly 6 to 8 pitchers of agua de Jamaica Naturally caffeine free Store sealed in a cool, dry place away from light
